Easy and healthy crock pot bison pot roast

Got a crock pot? Got some fresh veggies? Got access to bison? Then you can make this super easy crock pot bison pot roast. I’m trying to focus on eating better, and this is one of the healthy dinner recipes that I love to use.

Living in Colorado, we have a bison readily available. It’s a little more pricey than regular beef, but it’s also leaner. About once every other month or so I splurge and make one. I love it because it’s so easy and SO tasty!

What you need:

A crock pot
A bison roast (mine are 1.5 lbs)
carrots
an onion
red potatoes
beef onion soup mix packet

I put them in the crockpot in this order:

roast
dry soup mix
carrots
potatoes
onion
3 cups water

I then cook on low for about 9 hours. You can cook for anywhere from 8-10 but I’d say 9 hours is about where I like it the best.

It comes out looking like this:

It makes roughly 4 – 4oz servings and is about 400 calories per serving.

    I’ve never tried bison, this recipe has me wanting to try it soon! It is perfect for this time of year, still cold enough to want something cooking away in the kitchen, and deliciously hearty and comforting. Sounds delish!
