Quick and Easy DIY Thin Mints

Beat the summer heat with this no bake recipe!

I don’t know anyone, with the exception of my finicky husband, that doesn’t like thin mints. And what happens when it’s mid-June and all the Girl Scout cookies are gone? You make your own, that’s what happens!

If you watched the season premier of The Next Food Network Star you saw contestant Howie Drummond eliminated. Total bummer, as he’s a local radio personality that entertains me on my way to work every morning. His wife and I tweet and Facebook with each other. Locally, he’s involved in a few food related shows, and he also shares simple recipes both on the radio and on the Alice 105.9 website. This is one of his and about as easy as you can get!

What you need
4 ounces dark chocolate candy coating
1/8 to 1/4 teaspoon peppermint extract
18 to 24 vanilla wafers

Directions
Place candy coating and extract in a microwave-safe bowl. Microwave, uncovered, on high for 30-60 seconds or until smooth, stirring every 15 seconds.
Dip vanilla wafers in coating; allow excess to drip off.
Place on waxed paper; let stand until set.
Store in an airtight container.

I used about 6 oz of chocolate and made 28 cookies easily. It took maximum 10 minutes, and chilled in the fridge for about 20 minutes before serving. I’m one of those people who has to eat my thin mints cold! This is a perfect recipe for summer since it doesn’t involve turning on the oven. I also just put about half a dozen wafers in the bowl at once and sort of stirred them around, coating them with the chocolate and then used a spoon to place them on the waxed paper. A little less messy on your fingers!

Grab yourself an ice cold glass of milk and eat up!

    So in ‘girl math’ I’m seeing DARK chocolate (a MUFA and antioxidant) and if you use reduced fat nilla wafers — not TOO unhealthy.

    Hmm I never thought of making my own. I have peppermint extract and want to use it – as I love peppermint. Great (and not least of all – easy) recipe!!! Luv!
